Easter Inspiration!


The cherry blossom has bloomed, the days are getting longer and daffodils fill the fields, signalling that spring has finally sprung. What better way to celebrate the new season than with a spring themed Easter Sunday feast?

Spring produce is flourishing, with plenty of seasonal fruit and vegetables to choose from; artichokes, spring greens, beetroot, rocket and rhubarb are all in season. Why not try a few of these ideas to bring a big flavour punch to your table.

New Potato, Preserved Lemon and Samphire Salad
Although a little difficult to get hold of, samphire is a really tasty and underutilised ingredient. Usually paired with fish due to its affinity to the sea, it makes a great addition to this salad. Toss the carefully boiled new potatoes with good quality extra virgin olive oil, finely diced preserved lemons, black pepper and lots of fresh samphire. Season with salt to taste – although it won’t need much as the samphire is naturally salty.

Roasted Balsamic Tomatoes and Ancient Grains with Rocket Pesto
Tomatoes are great as they are, but when they are roasted they develop a delicious, sweet and jammy texture that soaks up all the flavour of the balsamic vinegar. Toss them through some cooked ancient grains with a healthy splash of olive oil and roughly chopped herbs. Drizzle with freshly made rocket pesto and a grating of lemon zest to cut through the full rocket flavour.

A classic flavour combination that is hard to beat. The humble rhubarb and custard pairing has stood the test of time and makes a delicious dessert option. Rhubarb isn’t in season for long, so it is best to make the most of it when you can. Serve with a sprinkle of crushed pistachios and freshly whipped lemon cream.
