While many symptoms of food allergy are mild – albeit unpleasant – such as itchy skin rash, nausea and breathing difficulty, some kick in rapidly and can be life-threatening. It is very important to distinguish food allergies from food intolerances or dietary lifestyle choices, food allergy is on the rise and has been for some time.

Children are more likely to be affected – between 6 and 8% of children are thought to have food allergies, compared with less than 3% of adults.If your child has food allergies, every meal can be an ordeal. You’re constantly monitoring to make sure he/she doesn’t eat something that could cause a severe, even life-threatening reaction.

Unfortunately Restaurant staff know surprisingly little about food allergies, and attitudes to customer health risks are often poor. Most pre-prepared food cannot be eaten by food allergy sufferers so preparing meals can become a time-consuming struggle, especially for people without specialist cooking skills and knowledge of ingredients.

Safe Cooking tips for Food Allergies

  • Shop carefully. When you buy packaged foods, read the labels to see if they have the allergy trigger in them.
  • Organize your pantry and refrigerator. Use different shelves for safe and unsafe foods, and store everything in sealed containers.

Take steps to prevent cross-contact:

  • Washing Hands – Teach everyone to wash their hands with soap and water before touching foods. Their hands could have allergens on them and they could make a safe food become unsafe.
  • Utensils – Do not allow allergen-covered utensils to touch your "safe" foods.
  • Teach everyone to clean all surfaces after preparing food and to clean countertops before preparing food. Countertops could have traces of allergens on them. Food prepared on an unclean countertop can result in cross contact with allergens.
